The ramen scene in Hong Kong has gained another star on its chest with the world’s first pigeon ramen as claimed by the Tokyo-founded Konjiki Hototogisu ramen chain in Hong Kong.

The Pigeon Shoyu Ramen (HKD138), currently available till the end of the year, brings together a fish-based ramen stock with Cantonese roast pigeon breast, duck breast, maitake mushrooms, and scallions for a soothing sip. 

The ramen carries a strong anchovy flavour with the stock, followed up by robust charcoal flavorous from the pigeon and duck breast. It is not as heavy as other shoyu ramen bowls, but with a strong salty hit so make sure to drink enough water for this.

Diners can make it an occasion with their ramen set menu (HKD158), including boy-choy and a choice of drink.

Konjiki Hototogisu currently holds a Michelin Bib Gourmand award in the Michelin Guide 2025 guide for Japan, notably famous in the Japanese capital for its clam and pork-based ramen broth.
