You’ve seen kale fried, juiced and shaken. But have you seen it baked into a brownie? Who wouldn’t want to sneak in a little dose of healthy in their favourite indulgence? These gluten free brownies have a rich coconut chocolate flavour, and won’t last long.

Kale Brownies

We wanted to make sure our kale brownies taste great, so we tested it on some kids. The verdict: YUMMY! They ate their daily dose of veggies without even knowing it. You’re welcome, mums!

Recipe: Kale Brownies by Sustenir

Makes 12-16 portions

Ingredients

  • 3/4 cup gluten-free flour (try 1/2 cup Brown Rice flour, 1/4 cup Arrowroot flour)
  • 1/2 cup Cocoa powder
  • 3/4 cup Coconut sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup Coconut milk (full fat)
  • 1/4 cup melted Coconut oil
  • 1 cup finely shredded Kinky (or Toscano) Kale, lightly packed
  • 1 teaspoon Vanilla extract, or 1/2 teaspoon Vanilla powder

Steps

  1. Preheat the oven to 350 degrees F.
  2. In a medium-sized bowl, mix the flour, cocoa powder, coconut sugar, baking powder and salt.
  3. Add in the coconut milk, coconut oil and vanilla, and stir until everything is well mixed.
  4. Fold in the Kinky Kale.
  5. Lightly grease an 8×8-inch baking pan with coconut oil, then pour in the batter and smooth it out evenly.
  6. Bake for 22-25 mins, depending on how fudgey you like your Kale Brownies.
