You’ve seen kale fried, juiced and shaken. But have you seen it baked into a brownie? Who wouldn’t want to sneak in a little dose of healthy in their favourite indulgence? These gluten free brownies have a rich coconut chocolate flavour, and won’t last long.
We wanted to make sure our kale brownies taste great, so we tested it on some kids. The verdict: YUMMY! They ate their daily dose of veggies without even knowing it. You’re welcome, mums!
Recipe: Kale Brownies by Sustenir
Makes 12-16 portions
Ingredients
- 3/4 cup gluten-free flour (try 1/2 cup Brown Rice flour, 1/4 cup Arrowroot flour)
- 1/2 cup Cocoa powder
- 3/4 cup Coconut sugar
- 1/2 teaspoon baking powder
- 1/2 cup Coconut milk (full fat)
- 1/4 cup melted Coconut oil
- 1 cup finely shredded Kinky (or Toscano) Kale, lightly packed
- 1 teaspoon Vanilla extract, or 1/2 teaspoon Vanilla powder
Steps
- Preheat the oven to 350 degrees F.
- In a medium-sized bowl, mix the flour, cocoa powder, coconut sugar, baking powder and salt.
- Add in the coconut milk, coconut oil and vanilla, and stir until everything is well mixed.
- Fold in the Kinky Kale.
- Lightly grease an 8×8-inch baking pan with coconut oil, then pour in the batter and smooth it out evenly.
- Bake for 22-25 mins, depending on how fudgey you like your Kale Brownies.
