Besides actively searching for culinary adventures across Hong Kong, I love to be the chef of my own culinary creations. Reminiscing to my home country, the Netherlands, I often like to add a Dutch touch to my recipes. One of the most famous Dutch delicates are ‘Pannenkoeken’, which is Dutch for pancakes. As a real cheese addict – and as it cannot get more Dutchy – I like to add some Dutch grated cheese (a.k.a. cheese flakes) to this recipe, which is ideal for all cheese lovers amongst us. It’s yummy & easy to make, and the use of healthier alternatives for butter, milk and wheat flour makes it a bit more of a guilt-free snack. So.. let’s get started!

Serving size: 4 pancakes

Duration: 30 minutes


  • 125 gram spelt flour
  • 1 egg
  • 1 teaspoon baking powder
  • a pinch of salt
  • 300 ml almond milk
  • 2 hands of Dutch grated cheese (or any other cheese)
  • 1 teaspoon of coconut oil


  1. Mix the spelt flour, baking powder and salt in a bowl. Add the almond milk and egg into it.
  2. Mix it all together until you get a smooth mixture.
  3. Heat up a non-stick pan over medium-high heat and grease it with a teaspoon of coconut oil.
  4. Add a scoop of mixture onto the pan and spread it out on the pan.
  5. Sprinkle some grated cheese on this wet mixture.
  6. Bake until the surface is just about to become dry and then turn it around to bake the other side      until it is golden brown.
  7. Repeat steps 4-6, to make 3 additional pancakes with the remaining mixture in the bowl.

Voilà, it’s ready to eat! Enjoy!
