Since Arbor opened its doors in early 2018, the restaurant, under the guidance of Chef Eric Räty, has been dazzling diners with its unique brand of French cuisine using top-notch Japanese ingredients. Arbor’s kitchen has seen several high-level collaborations lately, including a recent four-hands menu with La Cime’s chef, Yusuke Takada.

From 9–10 October 2018, Arbor’s kitchen will treat diners to what will surely be an epic collaborative menu between Chef Räty and sushi master Ryujiro Nakamura. For two days only, Arbor’s French cuisine will blend with the Japanese art of sushi making, featuring rare and ultra-premium ingredients from Tokyo’s renowned Tsukiji fish market. Expect various cuts of tuna, ikura, uni and eel to adorn the nine-course menu.

Hailing from famed two-Michelin-starred Umi in Tokyo, Chef Nakamura took over the restaurant from his predecessor, sushi master Chef Nagano, at the age of just 28. Helming a Michelin-starred restaurant with 40 years of history meant that Chef Nakamura had some pretty big shoes to fill, and we can’t wait to see how his traditional Japanese culinary skills will complement Chef Räty’s immaculate French techniques.

Arbor will be serving a special lunch menu ($1,988) and dinner menu ($3,888) on those two days. Steep prices… but at least it saves a flight to Tokyo.
