The flawless union between French techniques and premium Japanese ingredients is the winning formula behind Arbor and what earned the restaurant a shiny Michelin star within a year of its opening.
Chef Noboru Arai of two-Michelin-starred Hommage in Tokyo has built his career on a similar ethos and will join Arbor’s chef, Eric Räty, for an exclusive four-hands degustation menu on 11–13 April 2019 in Hong Kong.
Chef Arai worked in some of the most prestigious restaurants in France, such as two-Michelin-starred Le Close des Cimes and one-Michelin-starred Auberge la Fenière, before returning to Tokyo to open Hommage in 2000. To sum up Chef Arai’s career in his own words: “I take my past experience as the base ingredient and season it with novelty and inspiration to create every single dish from the bottom of my heart.”
The four-hands degustation menu will be available for lunch and dinner, priced at $1,288/person for the four-course lunch menu and $2,888/person for the nine-course dinner menu.
