Locavore comes to Roganic

One of our best meals of 2019 was at Michelin-starred Roganic by British chef Simon Rogan, which prides itself on its sustainable zero-waste philosophy, so we’re thrilled about this collaboration with Chef Ray Adriansyah of Bali’s Locavore, the winner of Indonesia’s Best Restaurant Award and the Sustainable Restaurant Award by Asia’s 50 Best Restaurants 2019. On two nights, indulge in seasonal, ingredient-driven dishes such as Roganic’s raw scallop in yuzu with oyster and grilled cucumber juice and dry-aged duck with fermented red cabbage, beetroot and preserved cherry up against cabbage steak with tempeh and mushroom XO sauce and beef heart with Padang spice, puffed grains and beef-heart bushi courtesy of Locavore.

Test Kitchen x Chef Pablo Lagrange (Argentina)

The next talent to strut his stuff at Test Kitchen is up-and-coming chef Pablo Lagrange from Argentina. Chef Lagrange has lived and worked at acclaimed restaurants around the world – from Noma to Mugaritz – now basing himself in Barcelona for the past three years. He was named one of San Pellegrino’s top 10 young chefs in 2018. For this four-night pop-up, the chef goes back to his South American roots, showcasing Argentinian-inspired dishes with his own creative twists. Highlights include sweet-and-sour ceviche with quince, clementine leche de tigre and pine oil, chicken empanadas with smoked crème fraiche and dill oil and lacto-fermented sweet potato ice cream with fried lacto potato, caviar, walnut oil and pollen sauce.

Cordis’ hotel’s Alibi is hosting Kit Cheung, the founder of HK’s first local branded gin – Perfume Trees – to help to create a selection of aromatic cocktails using local botanicals such as sandalwood, tangerine peel, Dragon Well green tea, Chinese angelica and michelia. The bespoke cocktails include Kit’s P Floradora, made with ginger syrup and raspberries, and the tangerine pu’er-tea-flavoured Sun and Moon by Alibi mixologist Leo Cheung. Wash down these tipples with some matching hors d’oeuvres by Executive Chef Li Yuet Faat of the hotel’s Michelin-starred Cantonese restaurant Ming Court – deep-fried sesame and sandalwood smoked chicken, braised Wagyu beef cheek with aged, dried tangerine peel, grilled eel with Chinese angelica and more.

Danny McLewin of UK-based DJ duo Psychemagik is coming to Duddell’s for a one-night music and visual show. Known for their beautiful production work and prolific remixing skills, Psychemagik will be showcasing their new compilations featuring weird and wonderful covers of tracks such as “All Night Long” by Lionel Richie and “Eyes Without a Face” by Billy Idol. McLewin will be accompanied by Hong Kong DJ Roy Malig and Potato Head’s Johnny Hiller and Saulty for what is sure to be a musical party of epic proportions.

  • Friday, 21 February, 9pm–late: the best of Brazilian music this street party on UM’s steps will showcase a Caipi Shack with caipirinhas aplenty and late-night beats
  • Saturday, 22 February, 7–10pm: Night Carnaval Brunch featuring 8 Brazilian sharing dishes + drinks; $890/person to include free-flow bubbly + beer or $990 to add cocktails to the mix

VEA Hong Kong x Mingles Seoul

Chef Vicky Chen of Michelin-starred VEA has a knack for getting top chefs from around the world to cook at his HK eatery, and the first chef to do so this year is Kang Min-goo of two-Michelin-starred Mingles in Seoul, crowned Korea’s Best Restaurant since 2016. For this one-night-only dining experience, expect a range of global flavours, from Chef Cheng’s Chinese-French cooking style to Chef Kang mixing up Japanese, Spanish and French flavours, with Korean cuisine as his backbone.

Test Kitchen’s next pop-up this month showcases the fabulous local chef duo of Ray Choi and Devon Hou, who over the years have worked and crossed paths at top HK restaurants like Mandarin Grill + Bar, L’Atelier de Joël Robuchon and Tate Dining Room & Bar. For this special crossover menu, fittingly called “If We Were in Charge”, the two chefs will together be reimagining their favourite dishes from these spots – dishes like abalone with liver paste, chicken crackling and king oyster mushroom, red prawn raviolo with sakura ebi and basil oil, M7 Wagyu beef rib-eye with black garlic and morning glory and warabi mochi with brown bread ice cream, candied walnuts and Biscoff crumble.
