In what could be a symbol that times really have changed and that there is a growing need to know that restaurants are making better choices, Michelin Guide has unveiled a “Sustainable Gastronomy” symbol that debuted in its new French guide.

Along with their signature stars, there is now a green clover that was awarded to 50 restaurants to “promote the chefs who have taken responsibility by preserving resources and embracing biodiversity, reducing food waste and reducing the consumption of non-renewable energy,” Michelin stated.

Although 50 might sound like a lot, there are currently just under 3,500 restaurants listed in the 2020 French guide. Each Sustainable Gastronomy selection is accompanied by a quote from the chef, and Michelin states specifically that, “three-Michelin-starred Mirazur’s permaculture gardens, David Toutain’s collaborations with environmentally conscious producers and craftsmen and Bertrand Grébaut’s bio-waste recycling programme at one-starred Septime” are the chefs who have earned the right to be “clover-ed.”

Michelin has yet to reveal when the clovers will be included in its international guides.
