Hot on the heels of its very successful Burger & Lobster extended pop-up, OZONE at The Ritz-Carlton – otherwise known as the world’s highest bar – is bringing Ministry of Crab from Sri Lanka to its swanky rooftop space for a limited time next month.

From May 3 till May 19, diners can savour a menu by the renowned restaurant originating in Colombo, with branches now in Shanghai, Chengdu, Mumbai, Bangkok, and the Maldives.

Starring on the five-course dinner menu (HKD1,588 pp) at OZONE are mud crabs and freshwater prawns flown in directly from Sri Lanka. To start, there’s crab-liver pâté enhanced with the sweet richness of kithul treacle, followed by a refreshing avocado crab salad.

Then it’s time to get your hands dirty with the fiery garlic chilli prawn. The iconic Sri Lankan dish of pepper crab made with hand-crushed peppercorns and pepper dashi is the final showstopping crustacean course. Coconut crème brûlée ends the menu on a  sweet, tropical high.
