Step aside, Culinary Class Wars. We have your next culinary-competition addiction: The Maverick Academy. In this Netflix series, eight young chefs vie for a three-month contract at fine-dining farm-to-table restaurant LUMA in Tsim Sha Tsui, mentored by Michelin-starred chef Alvin Leung.

Spoiler alert! We already know the winner of The Maverick Academy, and it’s this talented Indonesian chef – Yuda Bustara – who has spearheaded a new tasting menu at LUMA, created in collaboration with Cafe Bau head chef Kasey Chan and chef Alvin himself.

Dubbed “The Lap of Luxuries around Asia,” the six-course tasting menu (HKD1,288 pp) places a creative spotlight on the vibrant flavours found throughout Asia, utilising local ingredients to craft the dishes.

The diverse menu ranges from appetiser bites of Filipino oyster adobo and Thai tom yum king crab mochi to Indonesian-inspired Wagyu beef tongue with Java pepper and chocolate keluak crème brûlée. The centrepiece of the meal is chef Alvin’s signature Hung Wan Farm Ping Yuen chicken with Yi O rice.
