Cordis hotel’s bar Alibi, which has just unveiled a new vinyl-themed design this month, continues its groundbreaking cocktail approach with a selection of drinks crafted in honour of Earth Hour, the World Wildlife Fund’s global initiative each March encouraging sustainability.

From 5PM on Mar. 22 till Mar. 30, bar-goers can experience bar manager Billy Lau and head mixologist Jennifer Ho’s two zero-waste cocktails (HKD138 each), inspired by both Earth Hour and the UN’s International Day of Zero Waste.

First up, Spent, Leftover, & Unsold blends local N.I.P gin infused with used coffee grounds alongside lemon and aged wine. Leftover waffles from Alibi’s afternoon tea service are repurposed as a natural sweetener, whilst pretzel crumbs are toasted as a unique garnish.

Also made with N.I.P gin, All My Favourite Colours is the second sustainable cocktail showcased. This tipple stars two savoury ingredients from Alibi’s kitchen, onion and shallot, that are utilised from top to tail; the skins are infused with vodka, the leaves are caramelised and roasted, and the roots and sprouts are pickled.

In-house guests at Cordis will also be able to get their hands dirty by participating in the complimentary zero-waste cocktail workshop on Mar. 22.
