The tasty worlds of Japan and Italy are uniting on May 15 with Honjo and Pici’s collaborative dinner held in Sheung Wan.
Chefs Sandro Medrano Montero from Honjo and Sebastiano Ricciardetto from Pici are coming together to create a six-course tasting menu (HKD588 pp), with each dish fusing the cuisines of the Asian and European nations.
The menu begins with an amuse-bouche of tuna tartare, vitello tonnato sauce, and ikura, followed by nigiri with Wagyu beef, pesto, and yuzu kosho. The prawn-filled ravioli features a katsuobushi broth, whilst the uni tagliolini is topped with sea urchin cream sauce and mentaiko.
For the mains, the tagliata giapponese features Wagyu rib-eye, shiitake teriyaki, smoked potato purée, and rocket salad, with dessert coming in the form of the matcha pan di spagna. This sweet ending showcases Japanese sponge cake, Disaronno amaretto, and yuzu sorbet.
