The Enclave, a modern bistro located within Tung Chung’s The Silveri Hong Kong – MGallery, has launched a new six-course set menu incorporating local Lantau ingredients farmed from the land and sea.
The Destination Lantau – A Culinary Discovery menu (HKD588 pp.), available from 6PM to 10:30PM daily, begins with the familiar childhood classic grilled squid and crispy whitebait, before diving into the Hong Kong style gazpacho using local long green pepper.
The Lantau style risotto follows with Isoyaki fresh abalone, pan-seared lobster, and local dried scallop. The main course dish comes with a choice between locally-sourced grouper two ways garnished with dried Tai O sakura shrimps or a Lantau style surf & turf with Australian M4 wagyu and Cantonese-style braised sea cucumber.
The menu ends in a classy style with the Tung Chung Sweet, a hazelnut chocolate mousse paired up with Lantau flavours citrus peel, longan, and local malt sugar.
For those wishing to extend the theatrics on the night, both a nectar-themed non-alcoholic and alcoholic beverage pairings are available for HKD188 and HKD348 per person, respectively.
