Singapore is Asia’s first city to host The World’s 50 Best Restaurants awards party. The biggest names in the culinary world will gather in the Lion City from Saturday, 22 June until Wednesday, 26 June 2019 to await the revealing of The World’s 50 Best Restaurants winners.
The awards revealed to whet the appetite so far are:
The World’s Best Pastry Chef 2019
Head Pastry Chef at Alain Ducasse au Plaza Athénée in Paris, Jessica Préalpato has been voted The World’s Best Pastry Chef 2019. Préalpato was born into a family of pastry chefs and is well known for her use of seasonal ingredients to create highly flavourful but light dessert dishes.
Her signature dishes include strawberry clafoutis with frosted pine and Millason cake and “figue”, which features figs cooked three ways with fig ice cream and a light biscuit.
Miele One To Watch 2019
Lake Garda’s Lido 84 is this year’s One To Watch. The restaurant is run by brothers Chef Riccardo Camanini and co-owner Giancarlo Camanini, who revamped a former lido, or outdoor swimming pool (see header picture), with glorious views over the water. Their culinary philosophy stems from their surroundings, with the raw mountain milk from the area incorporated into the fior di latte ice cream, Bagòss cheese for pasta dishes, eel and pike from Lake Garda for starters and mains and olive oil, lemons and wisteria from the hills for sweet endings.
Recreating the renowned Roman dish as their signature, the cacio e pepe en vessie presents pasta, cheese and black pepper inside an inflated pig’s bladder for a touch of theatre in this aromatic, flavourful dish, which has already become a cult classic.
The World’s Best Female Chef 2019
The Best Female Chef award has thus far brought into the spotlight the work of 21 women across 15 countries, and this year saw Mexico City native Daniela Soto-Innes of Cosme in New York City named Best Female Chef. See our full story on Chef Soto-Innes.
