“We took local delicacies and turned them into cocktails. Savoury cocktails are a big trend now, and I’m very keen on this. Mondrian prioritises localisation, and so I have taken that to the next level,” says Joe.

The promising bar programme features the enticing Yuenyang Martini, mixing sleek vodka with a traditional mix of tea and coffee. The Sesame and Peanut Butter Sour shows love for Hong Kong’s beloved street-food flavours, whilst the Claypot Negroni takes its inspiration from the classic local claypot rice dish.

The bar offers a thoughtfully crafted menu that harmoniously complements the cocktail pairings. Indulge in delectable dishes like the Cantonese typhoon shelter-style lobster and crab roll, tropical ceviche featuring fresh hamachi with a homemade passion-fruit dressing, and beef-pastrami ciabatta.
