La Paloma’s Miércoles Calientes, or Hot Wednesdays, has returned to the Spanish hotspot, with the series offering funky fusion collabs with popular chefs and restaurants around town in the creation of a scene-stealing East-meet-West oversized paella.

Next up on Mar. 27, Ăn Chơi will make its debut at La Paloma with its deliciously authentic Vietnamese flavours – hard on the heels of its inaugural MICHELIN Bib Gourmand victory. 

The star of the menu is chef Lewis Dai’s Chả Cá Giant Paella (HKD488 pp), loaded with halibut, clams, dill, spring onion, and turmeric aioli, a riff on Hanoi’s classic chả cá lã vọng fried fish dish. 

The paella is complemented by a parade of Vietnamese-inspired tapas, including rice-paper pillows with foie gras cream and turmeric eel, snail skewers with laksa butter and chorizo, and mini bánh mì, and, to sweeten the palate, a dessert of Ăn Chơi’s delectable flan with coffee caramel, coconut ice cream, and coconut chips.
