The Upper House is excited to announce the promotion of new head chef Tony Leung and pastry chef Stephanie Peh, along with chef Ricardo Chaneton of MONO joining as an independent culinary adviser, working to reinvigorate the Mediterranean-inspired concept of Salisterra and its upcoming menu debut in January 2024.
Head chef Tony Leung joined the Salisterra team in 2021, working previously at Michelin-starred restaurant TATE Dining Room in Hong Kong. Pastry chef Stephanie Peh joins chef Tony in the team of 32 at the starry fine-dining restaurant.
Trained in Spain and the South of France, most notably as head chef of Mirazur, which was crowned number 1 at The World’s 50 Best Restaurants awards in 2019, chef Ricardo expands his dominion in Hong Kong’s F&B scene to tender his advice and skills at Salisterra.
Chefs Tony and Stephanie take the reins from departing chef Cary Docherty. “We thank Cary for his contributions to making Salisterra an exciting dining experience,” writes Kristina Snaith-Lense, general manager of The Upper House, in a press release.
