Jason White, former director of fermentation at Noma, the world’s best restaurant in 2010, 2011, 2012, 2014, and 2021, is joining Yardley Brothers for a one-month residency this April to lead research into fermentation across the brewery’s beer and food products.

Reported by founder Luke Yardley in a press release, Jason will be working with teams at both Yardley Brothers venues, Yardleys Taproom and The Beer Shack, to innovate on fermentation techniques that “represent Hong Kong and regional terroir”. 

Jason served as the R&D/fermentation manager for the Noma Fermentation Lab in Copenhagen from 2017 to 2022.  

In 2024, Yardley Brothers are focusing on their efforts in implementing fermentation methods to produce unique beer products on the market.

“I knew Josh [Yardley Brothers Chief Experience Officer Josh Abrams] through Noma and the MAD conference, so when he reached out to me about a possible collaboration, I was intrigued,” says Jason.

“When [Yardley Brothers founder] Luke and I got into conversation, I found a true connection between our ways of thinking and our excitement about fermentation. I can’t wait to get in the brewery and lab together and really start playing around with ideas and seeing what new things we can develop.” 

“With the move into our new larger brewery, which includes both culinary and lab spaces, as well as our public venues, I really hope to develop and build on conversations in Hong Kong that advance gustatory landscapes. Bringing Jason in for me both exemplifies how far we’ve come on this journey and hopefully sets a plan for future residencies and collaborations we look forward to hosting and joining,” says Luke.
